Nourishing Chicken, Tumeric and Vegie Soup

When the winter blues and frumpy feeling creeps in, the sore throat starts to tickle or sinus' block up, this is my go-to recipe. Super nourishing, warming, healthy and easy peasy.  Get in my belly!

Serves 6-8

What you'll need:
  • 1 tablespoon Coconut Oil
  • 5 cloves garlic, smashed 
and chopped
  • 1 brown onion
  • 2 tablespoon finely grated ginger
  • 1 tablespoon turmeric powder
  • 3 carrots roughly sliced
  • 2 parsnip roughly sliced
  • 2 zucchini roughly sliced
  • 1 litre chicken or vegetable stock**
  • 1 litre water
  • 1 Whole Organic Chicken, cut into 9 pieces, including the carcuss for flavour 
  • 2 bunches parsley, chopped

What to do:
  1. Add the coconut oil to a big pot, add onion, garlic and ginger - cook until soft. Stir through turmeric. 
  2. Add veggies, stock, water and chicken.
  3. Simmer for 30 – 45 minutes over a med heat until chicken and veggies are cooked through.​ ** ALTERNATIVE replace stock with water and slow cook on very low for heat for 4-6 hours. This will release the beautiful flavours of the chicken, the nutrient rich bone marrow and allow the flesh of the chicken to fall off the bone. 
  4. Stir through parsley just before serving.
  5. Serve in large bowls and grab and napkin (or two) for the spills :).
