Crunch on my Granola

I love this healthy, nutrient rich, wheat and sugar free crunchy granola. It's SO yummy I have it for breaky and as a sweet treat. Pictured here served with bananas and coconut kefir. YUM!

Ingredients.
  • 2 cups Oats
  • 1 cup Puffed Millet (Quinoa or Amaranth is great too)
  • 1 cup Pumpkin Seeds (or other favourite seed)
  • 1 cup Coconut Flakes
  • 1 cup Walnuts and/or Almonds
  • 1/3 cup Raw Honey
  • 1/4 cup Coconut Oil
  • 1 tsp Cinnamon
  • 1 tsp Cardamon
  • 1/2 tsp Nutmeg

  1. Pre-heat the over to 160 degrees celsius. 
  2. Mix all the dry ingredients in a large bowl then add the raw honey and coconut oil. Combine well.
  3. Line a tray with baking paper and spread the mixture evenly. Press firmly with a spoon.
  4. Bake for 20-30 minutes - watch it carefully! I've burnt it several times :(
  5. Turn the granola over 2-3 times whilst baking so it is evenly baked and golden. 
  6. Allow to cool in the tray and then place in an airtight container.
  7. Serve with yoghurt, fruit and milk/milk substitute or eat on it's own.  My fav is with banana and Coconut Kefir. YUM!
