crunch on my granola
I love this healthy, nutrient rich, wheat and sugar free crunchy granola. It's SO yummy I have it for breaky and as a sweet treat.
**I've updated this recipe recently with more yummy chai inspired spices - adding nutmeg, clove powder and star anise to the mix. I LOVE the aroma and taste of them - experiment with what flavours you enjoy most.

The what and how
- 2 cups Oats
- 1 cup Puffed Millet (Quinoa or Amaranth is great too)
- 1 cup Pumpkin Seeds (or other favourite seed)
- 1 cup Coconut Flakes
- 1 cup Walnuts and/or Almonds
- 1/3 cup Raw Honey (optional, this is the 'glue' that will add more sweetness and crunch)
- 1/4 cup Coconut Oil
- 1 tsp Cinnamon
- 1/2 tsp Cardamon
- 1/2 tsp Nutmeg**
- 1./2 tsp Clove Powder**
- 1/4 tsp Star Anise Powder**
- Pre-heat the over to 160 degrees celsius.
- Mix all the dry ingredients in a large bowl then add the raw honey and coconut oil. Combine well.
- Line a tray with baking paper and spread the mixture evenly. Press firmly with a spoon.
- Bake for 20-30 minutes - watch it carefully! I've burnt it several times :(
- Turn the granola over 2-3 times whilst baking so it is evenly baked and golden.
- Allow to cool in the tray and then place in an airtight container.
Serve with yoghurt, fruit and milk/milk substitute, sprinkle on your porridge or smoothie bowl or eat on it's own. My fav is with banana and Coconut Kefir. YUM!
