crunch on my granola


I love this healthy, nutrient rich, wheat and sugar free crunchy granola. It's SO yummy I have it for breaky and as a sweet treat.

**I've updated this recipe recently with more yummy chai inspired spices - adding nutmeg, clove powder and star anise to the mix. I LOVE the aroma and taste of them - experiment with what flavours you enjoy most. ​

​The what and how
  • 2 cups Oats
  • 1 cup Puffed Millet (Quinoa or Amaranth is great too)
  • 1 cup Pumpkin Seeds (or other favourite seed)
  • 1 cup Coconut Flakes
  • 1 cup Walnuts and/or Almonds
  • 1/3 cup Raw Honey (optional, this is the 'glue' that will add more sweetness and crunch)
  • 1/4 cup Coconut Oil
  • 1 tsp Cinnamon
  • 1/2 tsp Cardamon
  • 1/2 tsp Nutmeg**
  • 1./2 tsp Clove Powder**
  • 1/4 tsp Star Anise Powder**
 
  1. Pre-heat the over to 160 degrees celsius. 
  2. Mix all the dry ingredients in a large bowl then add the raw honey and coconut oil. Combine well.
  3. Line a tray with baking paper and spread the mixture evenly. Press firmly with a spoon.
  4. Bake for 20-30 minutes - watch it carefully! I've burnt it several times :(
  5. Turn the granola over 2-3 times whilst baking so it is evenly baked and golden. 
  6. Allow to cool in the tray and then place in an airtight container.

Serve with yoghurt, fruit and milk/milk substitute, sprinkle on your porridge or smoothie bowl or eat on it's own.  My fav is with banana and Coconut Kefir. YUM!
